Chris and Elise having seemingly nothing in common, yet one of the shows biggest constants is that they're married despite everyone's opposition. Dan, Elise Sr, Don, etc.
So if they are so "unfit" for each other, how did they meet? Any ideas?

Elise didn't want to be alone for the rest of her life due to her work with the SG. Chris was the only one stupid enough to not ask questions. Granted, that would mean getting involved with Dan, but it was worth it.
My guess is that Elise just finds Chris cute, and didn't want to break his heart, and Chris...I dunno, maybe he thought she was also cute.
Chris going after Elise makes sense. She's a nice woman, a more aggressive woman(Chris...isn't aggressive..like at all) and DAT ASS.
Elise going after Chris is a bigger question. I suspect her work had to do with it. Chris isn't the sharpest nail in the wall, and wouldn't ask questions

My best guess is that they ran into each other at some event OR that they knew each other from somewhere way back.
As to why they make a lasting couple:
Elise likes Chris cause he is friendly, empathic, helpful, laid-back, does chores around the house. He is also dependent and needs supervision (health and social-wise), and Elise clearly goes for that. She doesn't like the perfect, boasting Prince Charming her parents wanted her to engage with (Colby), but instead a 'normal', decent guy who is the exact opposite of her and who she hopes to shape into being a little better. By doing this, she is also spiting her strict parents. She is very unrelenting so even Dan won't stop her from staying with Chris. That is what I get from Elise's behavior and lines in the show.
Chris is still perplexed that a woman like Elise would permanently fall for him and doesn't know what he did to deserve her, that's why he questions if she might leave him from time to time. He needs a strong hand to lead him, as he is used from his childhood friend, so I see why he would go for a relationship where he is not the upper.

Well, Chris actually does ask himself what she's up to during the show. I mean, he has her on the phone while working and she just tells him lies what she is currently doing. If he ever asked her about her job directly, and I didn't really get the idea that he hasn't, I'm sure she just changed the subject and distracted him with something.
But in context of the show, people don't seem to really care what she does in general so I though it's just a "cartoon thing". Like, when Perry the Platypus disappears, someone says the obligated line and that's that. Nobody really gets suspicious for sake of plot.

Most men would get VERY suspicious, look deeply into in......and then probably suffer a terrible accident. Chris mostly buys her dismissals.

The marriage works because Chris almost never questions her and when he does she either brushes it off of or uses his Achilles' heel of food to distract him. One thing I always wondered about was in the Gigundo Mart ep Chris claims "I'm not sleeping with anyone." which seemed like an odd thing to say since he is married.

I think Elise was working a mission and accidentally ran into Chris. He liked her and pursued. Kinda like a puppy love kinda thing. Elise thought he was cute and started falling for his corny antics.
He does obviously care about Elise and considers himself lucky to be with her. I think Elise probably feels the same.
As far as them staying together, I feel like Elise likes the dynamic of their marriage. She's just Elise at the house. She lives a simple life, a stark contrast to what her job requires of her. Being with Chris probably is therapeutic to her.
